Mom’s Chocolate Chip Cookies {revisited} + A Megabite Birthday

My blog turned three last Tuesday! In dog years it can drink legally!

I figured that for this birthday I’d revisit my Mom’s Chocolate Chip Cookies, since they’re probably the first thing ever baked on my own in my life, and since they’re delicious.

So thanks guys for visiting my blog ever! It means the world to me! Without this little spot of the internet I would’ve never met Cindy in real life, and she’s the coolest. Because of Cindy I’ve made fried pickles, waffles s’mores, and my own vanilla extract. Without this blog I wouldn’t have realized how much I like food-styling. I probably wouldn’t have gotten to stack cheese really high or make super-model beef stew. Without it, I surely would’ve crumbled into a pile of despair over life reasons instead of baking my feelings. So I’m thankful for it, and you, and cookies!

Mom’s Chocolate Chip Cookies {makes 4-ish dozen}
Recipe adapted from my childhood*

Ingredients:

  • 1 1/3 cup butter, at room temperature
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 2 t vanilla
  • 3 cups flour
  • 1 t baking soda
  • 1 t kosher salt
  • 2 cups semi-sweet chocolate chips

* The only adaptation I made was to use all butter. My mom is a half butter and half crisco cookie maker. So feel free to do that if you are of that persuasion.

Directions:

  1. Preheat the oven to 350ºF. Line two baking sheets with parchment paper. Make the dough, f’sho. Using an electric mixer cream the butter and sugars together until fluffy. Add the eggs and vanilla. Mix until all combined.
  2. In a separate bowl, whisk together the flour, baking soda and salt. Add the dry ingredients to the sugar mixture and beat until smooth and everything is combined. Stir in the chocolate chips. Chill in the fridge for at least 30 minutes or over night.
  3. Place heaping teaspoons of cookie dough a couple inches apart on the prepared baking sheets. Bake for 8-10 minutes or until the edges are golden and the center is light still, but no longer shiny. Remove cookies from the oven and transfer to a wire rack until cool. Eat a few while warm and then save the rest for later! These also freeze fabulously.
