I love using holidays as a reason to make a layer cake, and these are four of my faves! Don’t worry too much about it being frosted perfectly, instead take the time to garnish it with cookie words, candied carrots, fruit, or almonds. It’s all about the garnish.
1. BANANA with Dulce De Leche & Brown Sugar Swiss Meringue Buttercream // Bananas feel like the coolest fruit ever in this layered hottie since they’re used to being being in a loaf or a muffin. Sometimes a banana needs respect and this cake is just the thing to dress it up. Can’t go wrong with brown sugar swiss meringue buttercream either!
2. CARROT Cake with Candied Carrot Asterisks & Yogurt Covered Raisins // This cake changed my mind about the scary “healthy” carrot cake of my childhood. The carrots are grated super fine and there are no raisins baked inside, but rather yogurt covered guys are used to garnish the top.
3. VANILLA BEAN Berry Cake // This cake is one of the prettiest ones ever when sliced. There are a ton of berries between the cake layers making it shortcake-esque, and dreamy all the way.
4. COCOA ALMOND Torte // This torte is so light! Not only are the cake layers super light and airy, the frosting is made with cocoa whipped cream and almond. It’s the kind of cake you’ll always have room for.
Let’s toast to cake! And eat cake instead of toast for breakfast!

Ok, so you may have just solved my Easter dessert dilemma. That carrot cake sounds awesome. I might be inclined to use any excuse to buy yogurt-covered raisins. I love those things! However, that banana cake is calling my name too. Oh, the choices!
