My blog’s four! If it was a degree, it’d be a bachelor’s! If it was a relationship, it’d be a serious one! In these four years, I’ve baked my feelings, made you brunch, drank beer with crepes, put beer in waffles, poured it over ice cream. I’ve tried to make pie without making pie. (Twice.) I’ve been super happy and super sad. I’ve met some great ladies and fellas! I just love this community. Ya’ll are inspiring! Thanks for taking the time to say hi! Now would you all just come over so I can make us mini crepe cakes, please?
Below there is a mini crepe cake for every year! I probably should’ve eaten all four. I bet that’d be the crepe equivalent to blowing out four candles, right? So one thing you should know about these is that it’s tricky to stack more than 5 if you’re putting whipped cream in the middle. (Example: bottom left leaning crepe cake.) But these guys can be so dainty! And if you pop them on a mini doily and skewer them, they’re pretty easy to transfer from platter to plate. So, yay! Let’s cake-ify brunch! Let’s eat chocolate forever! Let’s dust our berries with gold luster dust! Let’s live our lives!
Chocolate Crepe Cake Minis (makes over 30 mini crepes)
Ingredients:
chocolate crepes –
- 2 cups milk
- 2 T butter
- 2 eggs
- 1 1/2 cups flour
- 1/4 cups cocoa powder
- 1 T sugar
- 1/2 t baking powder
- 1/2 t salt
filling –
- whipped cream
- berries
- Nutella
- peanut butter
- powdered sugar
Directions:
- Put the milk and butter in a saucepan and heat over medium, until butter is melted. Whisk in the eggs.
- Meanwhile, whisk together flour, cocoa powder, sugar, baking powder, and salt in a medium bowl. Add the wet ingredients to the dry and whisk vigorously until smooth and no lumps remain.
- Meanwhile heat a frying pan/nonstick skillet on the stove at medium heat and spray with cooking spray. Using a cookie scoop or a teaspoon pour three-four rounds of batter into the pan. Flip when top is bubbled and almost set. Remove crepes and place on a cooling rack. Continue to cook all the mini crepes.
- Assemble by layering 5 mini crepes with whipped cream, Nutella, and berries to your heart’s content. Skewer and serve!
