Pumpkin Waffles

Some days are just no fun. Some days are filled with achey feet because you wore your new favorite shoes to the grocery store when they should’ve been saved for real goin’ out type things. And then sometimes headphones get dunked in tea on accident when they sure don’t know how to swim.

And sometimes when you forget socks to wear during step aerobics, it’s time to stop everything. Just stop everything, and make some pumpkin waffles because when these waffles are in your life, you won’t mind that your new shoes are as cute as they are uncomfortable. And you won’t even care that your headphones are mad at you.

It’s true. These waffles are like pumpkin zen for breakfast. And, pretty much, a day starting with these might be just the thing to kick those mid-week blues.

Pumpkin Waffles {makes 6 waffles}
Recipe adapted from Epicurious

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 T (heaping) brown sugar
  • 1 1/8 t baking powder
  • 1/2 t baking soda
  • 1/4 t salt
  • 1 t cinnamon*
  • 1/2 t ground ginger*
  • 1/4 t cloves*
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup buttermilk**
  • 1/2 cup pumpkin
  • 3 T unsalted butter, melted
  • cooking spray for the waffle iron

* I used 2 teaspoons pumpkin pie spice.
** Pour 1/2t lemon juice in a 1/2 cup measuring cup. Top with milk and set aside.)

Directions:

  1. Preheat oven to 250°F and preheat waffle iron. Place a baking sheet in the oven to be ready for the waffles.
  2. Sift together the dry ingredients: flour, sugar, baking powder, baking soda, salt and spices.
  3. In a large bowl whisk the eggs until blended, then whisk in the milk, buttermilk, pumpkin and butter until smooth. Add the dry ingredients and whisk, just until smooth.
  4. Spray waffle iron with cooking spray and spoon batter (about 2/3 cup for my heart shaped waffle maker), spreading quickly. Cook according to your waffle iron’s instructions.
  5. Transfer waffle to the baking sheet in the warm oven and make the rest of the waffles.
  6. Serve topped with a pat of butter and real maple syrup.

Note: This makes enough for two very hungry people or three moderately hungry people. Basically, two waffles per person is enough, but Jake and I are champs and had three waffles each.

Waffles = gone. Elliot and I were both sad.

  1. Waffles look great! You can tell Halloween is coming when all of the pumpkin recipes start to come out. I’m excited!

    As for your headphones, if they took an unintended swim and aren’t functioning quite right, you can try this: put them in a sealed container with some (uncooked) rice. It wicks out moisture, and has definitely saved a set of headphones or two for me.

    My headphones started working again! Thanks for the rice tip though. I will use that in the future for sure, considering I can’t be trusted with electronics. 🙂
