So, do any of you guys tend to do the good old pants dance where you tug your pants up by the belt loops? I guess I yanked the hell out of my red corduroys because I ripped them like whoa. And so I FINALLY decided to fix that tear and while I was cutting the hot pink (I couldn’t find red) thread I snipped a hole in the leg of those same red pants. I Steve Urkel-ed them and I think it’s a sign. Retired these tattered weirdos and buy some new ones, I mean, what I trying to prove here, ya know?

Luckily, I Steffan Urkel-ed these piesicles. I made pumpkin pie into it’s hottie un-nerdy self. No judgement, pie. What I’m trying to say is that I didn’t mess these up or spill them (that much) or anything! So boo yah, and boom shaka laka, and yay!

So if you love pumpkin pie, you’ll  love these pops! If you aren’t that into pumpkin pie, don’t bother because these taste EXACTLY like it. Top a pop with whipped cream and pass it to your weird uncle on Thanksgiving because these popsicles are piesicles.

Pumpkin Piesicles // take a megabite

Pumpkin Piesicles (makes 10)
Recipe with minor adaptions from OMFG So Good

Ingredients:

simple syrup –

  • 1 cup water
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 t cinnamon
  • pinch of ground cloves
  • 1/4 t ground ginger
  • pinch of nutmeg
  • 1 T maple syrup

pumpkin goodness –

Directions:

  1. Make the simple syrup by warming all of the ingredients over medium heat, stirring constantly, for about 5 minutes or until the sugar is dissolved. Mix with the pumpkin puree, and salt. Taste, and add more maple syrup if you’d like them sweeter. Fold the heavy cream and oatmeal cookie or granola into the mixture, but don’t stir! Divide amongst popsicle molds and freeze overnight.
