Chocolate Brownie Cookies

My sister, Laura, and I made these so that my parents’ house would smell super-amazing. You see, my parents are trying to sell their house, and cookies help dreams come true.

These are divine. They get a crinkly top like brownies get, which is much more flattering than a muffin-top. Basically, these are brownies in cookie outfits.

So pretty much, these suckers are just the thing to round out your christmas cookie list, make your house smell dreamy, and bring you and your sister together in the baking BFF way.

Chocolate Brownie Cookies {makes about 30 cookies}
Recipe from King Arthur Flour via Joy the Baker

Ingredients:

  • 8 ounces bittersweet or semisweet chocolate chips
  • 3 T butter
  • 1 cup sugar
  • 3 large eggs
  • 1 t espresso powder
  • 1 t vanilla
  • 1 cup all-purpose flour
  • 1/4 t baking powder
  • 1/4 t kosher salt
  • 1 cup chocolate chips
  • powdered sugar for sprinkling, or pecans for topping or a glaze for drizzling*

Directions:

  1. In a double boiler, or in the microwave, gently melt butter and chocolate together. To avoid over heating stop heating when the butter is melted and stir until chocolate is smooth.
  2. In a separate bowl, beat together the sugar and eggs until thoroughly combined. Add the melted chocolate mixture and then stir in remaining ingredients: espresso powder, vanilla, flour, baking powder, salt and chocolate chips. Place the dough in the fridge for about 30 minutes or until it firms up a bit and is easier to handle.
  3. Meanwhile, preheat the oven to 325°. Lightly grease two or three baking sheets and drop the cookie dough by the tablespoonfuls onto the prepared baking sheets. Leave about 2″ between the dough balls as they’ll spread while they bake.
  4. Bake the cookies for 11-12 minutes, until their tops are shiny and crackled. Remove the cookies from the oven and allow to cool for at least 5 minutes on the baking sheets before transferring them to a wire rack to cool.

* If you’d like to, you can place a pecan on top of the cookies halfway through baking. It’ll make them extra fun. Or whisk together a teeny bit of milk with a bit of powdered sugar and cinnamon to drizzle it on top, or just keep it real and sprinkle them generously with powdered sugar.

Meg, I put the above plate in a large zip lock bag.. and put them in the freezer.. we have a showing tomorrow and they are going to be on the table!! So maybe they will STILL sell out home yet! Here’s praying!! Love you sweet daughter.

Wow, Megan these look awesome. I was thinking I’d make your mini coconut cupcakes and then these came along. Now I have a proper debate…! I’m making the family christmas cake tomorrow but wanted to make something else (for some instant gratification!). these might be it.

p.s Freezing them? Now that’s a tempting idea- Chocolate Brownie Cookies always to hand.

Oh! Family christmas cake sounds so fun!

I bet either would make everyone happy. You could always put a bit of chocolate in the middle of the coconut cupcakes. 🙂

Okay, officially…. yum! Made them this afternoon and they were the perfect sunday afternoon treat. Mine have come out looking a little lighter in colour than yours, but I used milk chocolate- perhaps yours was dark choc? Very moreish, none have yet made it to the freezer!

Yup, the family christmas cake is the official start of christmas. Its a lighter one than traditional English fruit cake with some light ale and honey.

Awesome, Lucy! I used semi-sweet because that is the standard chocolate in the house. I bet they were super tasty with milk chocolate though.

Brownie cookies sound good!

When my mom was selling her house this spring, she asked me to bake a brownie to make the house smell extra inviting. This would have all went well, except I started preheating the oven before I found out that she had hid the toaster in it in order to get it off the counter. Melted toaster did not smell inviting at all, but luckily with some airing out the smell went away. Ha ha.
