Loui’s Pizza {date night}

We don’t care about being fancy. We do care about pizza and beer. We chatted about an elephant and a dog being best friends; because of this. We ate tasty Cappaletti Soup that had the prettiest scallop-edged noodles in it. We got a small pizza with pepperoni, sausage, and mushrooms. My half was bigger! Then we got really full yet finished our pitcher so the waitress wouldn’t judge us. We’ll probably go back next week…

Fettuccine Alfredo with Broccoli {a lighter quicker remix}

I never feel weird about heavy cream in sweets, but sometimes I feel like there’s no dessert allowed if there’s heavy cream in my dinner. … and I always want dessert. This version of Fettuccine Alfredo is made without heavy cream. It’s thickened with some butter, cream cheese, and a heaping 1/2 cup of grated parmesan. I like this with plenty of broccoli and sometimes chicken. For this, I bought the good pasta; the kind…

Snails {of the carby variety}

Do you guys know about Gary? Gary is the snail with a broken-ish shell that I found in the alley, a year or so ago. Jake insisted on saving him and giving him a home in a christmas gladware container. Gary ate baby spinach, drank water, and travelled around that gladware. P.S. The picture below features Pink Himalayan Sea Salt. It’s the valentine of salt. When the weather warmed up Jake set him free in…

Black Bean + Sweet Potato Stew

If I had to choose two songs, as the best songs, for singing in the car, I’d pick: Since You’ve Been Gone by Kelly Clarkson + Screaming Infidelities by Dashboard Confessional. Don’t bother judging me, ok? These are not my two most favorite songs in the whole world, or favorite artists even. But these songs are really good for singing from your heart alone in your car. If had to tell you a few foods I consider…

Roasted Sweet Potato + Black Bean Open-Faced Tacos

I used to think I didn’t like sweet potatoes. I guess I was thinking of yams … weirdo canned yams topped with pineapple and marshmallows. Bleck. Then I saw a tostada recipe on Two Peas and Their Pod. One that played up the savory side. I gave sweet potatoes another chance, and I’m so glad I did. So now I know these things: sweet potatoes are really pretty, they taste dreamy and they roast up…

French Bread Pizza

I’ve been eating cereal for dinner lately. Cereal or bread. Carbs on top of carbs. So here’s a way to get carby with it, while still actually making something, and it tastes like pizza and it’s not weird like the frozen dudes. Jake made us french bread on Saturday morning. And since we are the kind people who always have pizza ingredients handy, we made these. They are tasty, quick, and way better than cereal…

Pad Thai

I’ve been craving Pad Thai for exactly one week. So finally, I perused around for recipes and Jake and I cooked it up. Elliot didn’t help. He doesn’t have thumbs. Except he did eat the chicken that flew out of the pot, because I stir in a very messy way. So I guess, he did help … in the eating-flying-chicken way. I had no idea that Napa cabbage was such a big part of this…

Mom’s Baking Powder Biscuits

My mom’s love for biscuits has passed on to me. Like her, I make these willy nilly. Late night snack? Sure thing. Saturday breakfast? Yum. These biscuits taste like an after-work snack or like a weekend miracle. They taste especially good right out of the oven, with a nice little crunch. They taste dreamy for a couple days, but I doubt they’ll last that long. I recommend throwing these together while you’re waiting for beef…

Meatball Sliders

Remember how I made those silly hoagie buns? Well, they wanted to hold provolone and meatballs when they grew up. And it happened! This is that dinner date I told you about. You know, the date with some hoagie buns? As soon as I saw this recipe on The Pioneer Woman’s blog, I couldn’t stop thinking about it. And it sure didn’t disappoint. This was my first meatball attempt. Normally Jake makes things like this,…

{Round} Hoagie Buns

I have dinner plans with these guys. I’d even call it a date. Rumor has it these are good at holding beef. At least that’s what Betty from Colorado says on the Taste of Home website. Betty just wanted a delicious and convenient way to hold her beef and here it is. You may be yelling at your computer screen right now. You’re probably saying something like. “Megan! Those hoagie buns are supposed to be…
