French Silk Pie {revisited}

I’ve eaten this pie my whole life. It’s my favorite. So I just needed to make it again to chase away the rainy blues in the mitten.

I also used to order this when my family would go to Baker’s Square. Once, when they didn’t have it and I cried and they gave me free pie.

(I was a kid! So what!)

Basically, this is the go-to dessert for my whole family. My mom, sisters, and I make this all the time. Currently, Jake and I have taken down all but one piece of this. We’re champs.

But you should totally give this a shot! It’s a light, fluffy, mousse-like pie. And honestly, what’s better than graham crackers and chocolate? I can’t get enough of that combo.

Recipe from my mom

Ingredients:

  •  1 (8 or 9 inch) graham cracker crust (recipe below)
  • 3/4 cup (1 1/2 sticks) butter, softened to room temperature
  • 1 cup sugar
  • 2 oz. unsweetened chocolate, melted and cooled slightly
  • 3 large eggs
  • 1 T vanilla
  • whipped cream  (recipe below)

Directions:

  1. Using an electric mixer (or a stand mixer, if you’re lucky and have one) cream the butter. Slowly add sugar and whip until smooth.
  2. Blend in chocolate until mixed evenly.
  3. Add eggs, 1 at a time, beating 5 minutes after each; this is a must! (Skimping on the time will have runny results. It may induce tears.)
  4. Add vanilla and mix until combined, scraping the sides.
  5. Pour into pie crust, and chill for several hours or over night.
  6. Top with whipped cream and chocolate shavings and please crowds!

Graham Cracker Crust
Recipe from Betty Crocker

Ingredients:

  • 1 1/2 cups graham cracker crumbs (about 20 squares)
  • 1/3 cup butter, melted
  • 3 T granulated sugar

Directions:

  1. Preheat the oven to 350 degrees F. Stir the butter and sugar into the graham crackers until all of the crumbs are coated. Press into the bottom and sides of a pie pan using a glass.
  2. Bake for 10 minutes or until golden brown. Cool completely before filling.

Whipped Cream

Ingredients:

  • 3/4 cup heavy cream
  • 1/4 cup confectioners’ sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Beat all of the ingredients together using an electric mixer, until soft peaks form. Spread over chilled pie and top with chocolate shaving or swirls.

    Total accident but a very fortuitous one. The beaters tasted delish so I am looking forward to the end product. The only problem is we don’t have Graham crackers in the UK (and we pronounce it Grey-ham, and we spell it Gray!)

  5. I pinned this ages ago, and finally threw it together this morning. I didnt have enough graham crackers for the crust, but I had Oreo crumbs so I’m improvising with those. Can’t wait to dig in!
