I’ve always been a bit whatever about oatmeal. I mean, those lil satchels with maple brown sugar goodness from my childhood? I’m kinda into those. But oatmeal served up adult-style? Nah. Until I tried making it with almond milk infused with a bit of vanilla, cinnamon and honey. THEN things changed for me.
I’ve been making this basically every morning. I think my mom is probably totally proud. She’s always been an oatmeal-loving-lady. Ordering it out even! So come on over! I’ll make you oatmeal and we can chit-chat over super dark black coffee, ok?
My Favorite Oatmeal Breakfast (serves 1)
Recipe adapted from Fool Proof Living
Ingredients:
- 1 cup almond milk
- 1-3 t honey
- 1 t vanilla
- generous sprinkle of cinnamon
- 1/2 cup rolled oats
- 2 t chia seeds
- top with: almonds, freeze-dried berries or anything!
Directions:
- Bring almond milk, honey, vanilla and cinnamon to a boil. Add rolled oats. Cook for 5 minutes stirring now and then until cooked and oats aren’t super milky. Turn heat off and stir in chia seeds. Top with freeze-dried strawberries and nuts. Eat right away or transfer to a jar and bring on the road.

P.S. He’s totally wearing a washable diaper. He’s had problems with having accidents ever since his injury a few years ago. Turns out these little pants make him more aware of his hind end. (Is this too much information?) Anyhow, these pants have made life easier, f’real.
Sounds like a grand old morning to me! And I love the doggypants idea! It would have made life with our old (20 year old) terrier a lot easier too. Plus he looks quite dashing in his little gentleman pants 🙂

I love that you add vanilla in your oatmeal! Definitely necessary…also, the chia seeds sounds great too!
YUM YES YUM. I basically have the same oatmeal every day but whenever it gets special I do a post called “Oatmeal du Jour.” THIS is kinda special, lady.
Oatmeal can be boring if you don’t know how to do it right. I can clearly see you’ve got it down. I love this recipe!
I’d pretty much eat anything out of that pretty pear bowl, but that oatmeal sounds so good! I always wondered who ordered oatmeal out, I figured it was just there to make me feel bad about ordering eggs benedict or stuffed french toast 🙂
