Malted Waffles For Two

Breakfast should always be disguised as dessert on the weekend.

When I was a kid, my mom would sometimes make waffles and sandwich ice cream in the middle. I think these waffles would be really good at that. They’d taste like a breakfast malt, and that sounds like the best idea yet!

Have you bought the Baked Explorations cookbook yet? If you haven’t, you should probably get right on it. Every single recipe is dreamy looking. These boys know what’s up. They add malted milk powder to waffles and frosting and all sorts of goodness. And after you taste theses, you’ll probably add it to everything too.

Time to go eat more waffles!

Malted Waffles for Two {makes about 5 waffles}
Recipe adapted in half from Baked Explorations

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup malted milk powder
  • 1 T firmly packed light brown sugar
  • 1/2 t baking soda
  • 3/4 t baking powder
  • 1/4 t salt
  • 1 large egg at room temperature
  • 1 1/4 cups buttermilk*
  • 3 T unsalted butter, melted + cooled to room temperature
  • maple syrup + chocolate shavings + strawberries + love

* Place a tablespoon of lemon juice in a 2 cup measuring cup and fill to the 1 1/4 cup line with milk. Set aside.

Directions:

  1. Place a baking sheet in the oven and turn it on to 225°F. Preheat your waffle iron.
  2. In a large bowl, whisk together the flour, malted milk powder, sugar, baking soda, baking powder and salt. Meanwhile whisk together the egg, buttermilk and butter. Make a well in the dry ingredients and pour the buttermilk mixture in. Gently fold the wet ingredients into the dry ingredients until just combined. Don’t worry, if there are lumps, they won’t ruin anything.
  3. Spray your waffle iron with cooking spray and start cooking your waffles. Pour in 1/4 cup -1/2 cup depending on the size of your waffle maker. Cook according to manufacturer directions.
  4. Transfer waffles to warm oven to keep them toasty while you make the rest. Serve immediately with maple syrup, chocolate shavings and strawberries.

The malted flavor is a dreamy one.
