You know what makes me mad? When I grab a dish towel out of the cupboard and they all fall out on my head. And when the train near my house keeps me from dinner when I’m super hungry. Or when I reach for a beer in the fridge, but all I have is some weirdo dark stout guy that’s not for a casual after-work sipping. It maybe frustrates me when I postpone slicing rice krispie treats for a day and find that they are living up to their “kris pie-ness” and slice all jagged-like.

Sometimes the only answer is to eat every crumb and scrap. Sometimes the other answer is just not judge their jagged edges and to love them just the way they are like Mark Darcy loves Bridget Jones. Because, you see these striped hotties are so good! The strawberry layer is pink from ground freeze-dried strawberries, and the chocolate layer is full of Nutella.

And, sorry guys. I just want to turn everything into a little mini deer disco tree mountain.

Neapolitan Rice Krispie Treats
Recipe adapted from Bakingdom

Ingredients:

strawberry –

  • 2 1/2 T butter
  • 5-6 oz. marshmallows
  • 3 T freeze-dried strawberries, ground
  • 3 1/2 cups rice krispies

vanilla –

  • 2 1/2 T butter
  • 5-6 oz. marshmallows
  • 1 t vanilla extract
  • 3 1/2 cups rice krispies

chocolate –

  • 2 1/2 T butter
  • 5-6 oz. marshmallows
  • 3 T nutella
  • 3 1/2 cups rice krispies

Directions:

  1. Grease a 9×13 inch baking dish.
  2. Make strawberry layer by melting butter and marshmallow together in a large saucepan. Add ground strawberries and rice krispies. Stir until combined. Press into prepared pan.
  3. Make vanilla layer by melting butter and marshmallow together in a large saucepan. Add vanilla and rice krispies. Stir until combined and then top strawberry layer. Pat into an even layer.
  4. Finally, make the chocolate layer! In a large saucepan, melt the butter, marshmallows, and nutella. Stir in rice krispies. Top the vanilla layer. Allow to cool slightly. Lift out of pan and slice. Otherwise they’ll be SUPER tricky to slice and might break a bit like mine did.

  1. I love that you quoted Marc Darcey’s “just the way you are.” I can never get enough of that movie! Been experimenting with dried fruit myself. I found a bag of dried blueberries at TJ’s the other week and have been grinding them in my coffee for a tinge of blueberry flavor. Super good!

    1. I didn’t watch Bridget Jones at Christmas last year so I might need to watch it soon! And oh man, that sounds so good! I’m going to have to try berry-ing my coffee.

  2. These sound so great, lady! I wouldnt even have noticed that the edges were jagged actually. I am too snowed by this freeze-dried strawberry idea! It rules! And the nutella layer looks nutty and delicious. I am so into this. Crispy rice treats are one of my faves!!

  3. ALWAYS eat every little crumb. God, I swear I have the hardest time resisting licking spoons of batter or cookie dough or the marshmallow mixture for these! With that said, I would gladly ignore my diet for the day and eat all of these. Yes, every single one. They look so so so delicious! You never fail. πŸ™‚

  4. Amazingness. I’d like to Neopolitan everything, I think. ALSO, I forgot to tell you that we were stopped by a train on our way to your brunch after I was just joking about it and I kind of freaked out. Thankfully it was just Amtrak and it went by really fast. Phew!

  5. falling towels are the worst! I dropped my fork on the ground the other night when we went out for lebanese food and it made me so mad! good thing there was fresh pita for me to eat while I waited for a clean fork. I bet these crazy-beautiful rice krispie treats would have helped too!!

    I LOVE that you used freeze dried strawberries instead of some fake, junky flavoring like I see in so many strawberry recipes. I can’t wait to try these! πŸ™‚

    PS – I have both the deer and disco trees – like DOZENS of them. I use them every year during Christmas for my coconut or marshmallow topped cakes and cupcakes. I love them.
