It’s time to freeze up some breakfast smoothie business. Take a bite and then run an un-bitten one downstairs to your new neighbor. You see, even a gentleman can appreciate the ladylike looks of this pop. They’re a healthy snack! A breakfast! A friend-maker! Offer some to his dapper cat. Offer some to your bow-tie wearing dog. Live your life.
It’s still summer. So we should really embrace it! Popsicles for breakfast and sandals and sunglasses and tank top dresses. It’s just how it is. And these hotties are a healthy snack in a super fashionable outfit. They are sweetened with honey and maple syrup and berries. Greek yogurt makes an appearance too. There was a smidgen of strawberry left, and I just picked up that big bowl and drank the rest. Is that weird? Did I treat that bowl like a chip bag? Maybe, but you better believe I wasn’t wasting one lovely drop.
Berry Breakfast Pops (makes 10 + a lil extra to chug)
Coulis recipes adapted from Smitten Kitchen
strawberry layer –
- 2 cups quartered and hulled strawberries, mashed
- 2 T water
- 1 T honey, to taste
- 1/2 cup greek yogurt
raspberry layer-
- 2 cups raspberries
- 2 T water
- 1 T honey, to taste
- 1/2 cup greek yogurt
blueberry layer –
- 1 cup blueberries
- 2 T water
- 1 T maple syrup
- 1/4 cup greek yogurt
Directions:
- Puree the strawberries with water, and honey in a food processor. Strain into a bowl and whisk in greek yogurt and additional honey or maple syrup to taste. Do the same with the two other berries in a clean food processor and into separate bowls.
- Divide berry purees between ice pop molds. I used a funnel to keep the sides clean between layers. Feel free to layer however you want! Insert sticks and freeze until solid, 6 hours or overnight. Eat for breakfast in lieu of a smoothie.
