Single Lady Blueberry Cobbler

Because sometimes you’re craving a warm fruity dessert in the morning. And maybe you bought a tiny carton of vanilla ice cream for just such a craving. And maybe you have exactly one cup of blueberries that are keepin’ it real in your fridge. And maybe you just want to enjoy dessert without feeling like you have to have a big reason for making it.

So, I ate this while standing in my dining room, looking real cool in my pajamas, a flannel, and slippers. And it just totally helped my outlook. Sometimes weekends are tricky when they’re full of more thoughts than plans. But sometimes all it takes is a warm dessert, and a cool breeze to turn things around.

I recommend getting your cobbler on breakfast-style. (Why not?) Ice cream for breakfast is the new yogurt for breakfast maybe.

P.S. This cobbler is perfect for one. However, it is just as perfect for sharing with a hottie after dinner.

Single Lady Blueberry Cobbler

Ingredients:

berries –

  • 2 T sugar
  • 3/4 t cornstarch
  • 1/4 t lemon juice (or a little splash)
  • 1 cup fresh blueberries
cobbler –
  • 1/4 cup flour
  • 3/4 t sugar
  • heaping 1/4 t baking powder
  • tiny pinch of salt
  • 1 T cold butter
  • 2 T milk

Directions:

  1. Preheat the oven to 400F. Make blueberry filling. In a small saucepan heat the berries, sugar, cornstarch, and lemon juice until bubbly and the liquids start boiling. Allow to boil for 1 minute. Pour into a small oven-save dish or two ramekins.
  2. Make cobbler by stirring together the flour, sugar, baking powder, and salt. Rub the butter into the dry ingredients. Add milk one tablespoon at a time. Stir until a soft dough comes together. Drop small mounds over the hot berries.
  3. Bake for 15-20 minutes. Serve with ice cream or whipped cream.

  1. I’m more of a crisp or crumble girl myself, and have made a few on my blog, but I think they make a wonderful breakfast, even cold from the refrigerator. I mean a day that starts with fruit and topping has to be a good day, right?
