One Big Multigrain Pancake

This pancake is for the super hungry waker-upper. It’s for the pancake champ. It’s for the hearty-whole wheat lover. It’s for me.

This isn’t a light pancake. It’s actually pretty heavy. It’s manly, even. It’d wear flannel and chop wood and save me from a dragon. What a gentleman!

You see, this pancake won. I didn’t completely finish it. Instead I left 2 whole bites on the plate and laid on the couch in defeat. But I liked it! It has a little crunch from all rolled oats, and it is super tasty with fruit on top. Especially those fancy golden raspberries that are made of hopes, dreams, unicorns, and glitter.

One Big Multigrain Pancake {serves 1 very hungry, or 2 kinda hungry}

Ingredients:

  • 1/2 cup buttermilk
  • 2 T old fashioned rolled oats
  • 1 egg white
  • 1/2 cup whole wheat flour
  • 2 T corn meal
  • 1/2 t baking powder
  • 1/2 t baking soda
  • 1/8 t salt
  • pinch cinnamon
  • 1 T brown sugar
  • 1 or 2 T milk, for thinning
  • maple syrup + fruit for topping

Directions:

  1. Mix buttermilk and rolled oats in a small bowl and set aside for 15 minutes. Also heat up your large non-stick skillet at the same time over medium heat.
  2. Whisk the egg white into the buttermilk mixture. Meanwhile mix all of the dry ingredients together: whole wheat flour, corn meal, baking powder, baking soda, salt, cinnamon, and brown sugar. Fold the wet ingredients into the dry ingredients. If it’s too thick add a little bit more milk, I added a tablespoon or two.
  3. Spray the skillet with cooking spray. Pour in all of the pancake batter and spread out into a reasonable circle. Cover with a lid or a plate and cook until the top is bubbled and bottom is set (about 3-4 minutes). Flip and leave uncovered for about 4 minutes. Serve to yourself. And eat until you have to lay on the couch in defeat.

  1. Hooray for golden raspberries! So, so pretty. They remind me of white currants, which are a favorite of mine (looks-wise only, as they’re kinda sour).

  3. Mmm.. I made this for dinner (Shrove Tuesday) last night. My husband doesn’t like pancakes (wha..??), but he was conveniently at work last night.
    It was delish. ‘Cept I made two instead of one giant one. The thought was to eat the other one later, but that seemed like a silly idea when I finished the first one.
