Mini Double Chocolate Donuts {or Chocolate Donut Hole Mini Muffins}

Once, I bought some round sunglasses with the hopes of looking hip like Lady Gaga, but I looked more like a nerdy beatle fan. They broke when I was walking Elliot and talking on the phone with my sister. I’ll only buy sunglasses from Target from now on.

All I’m saying is that if you hold these donuts in front of your eyes, you’ll probably look way cooler than I did in those sunglasses.

Chocolate donuts were a childhood favorite. And by childhood I mean when I was old enough to drive. I used to drive through Dunkin’ Donuts and get one double chocolate donut and a chocolate milk. I was a drive-thru regular. I’m not proud of this fact. The truth is, I try to avoid donuts now because I like them a little too much. But I baked these jerks, so I should feel really good about gobbling up a stack for breakfast, right?

Chocolate Donut Hole Mini Muffins {2-3 dozen donut dudes}

Ingredients:

donut holes –

  • 1 cup all-purpose flour
  • 2 T cocoa powder
  • 1 t baking powder
  • 1/4 t baking soda
  • scant 1/3 cup sugar
  • 1/2 t ground nutmeg
  • 1/2 t salt
  • 2 T unsalted butter, softened
  • 1/4 cup buttermilk
  • 1/4 cup yogurt
  • 1 t vanilla extract
  • 1 large egg

chocolate glaze –
recipe from Joy the Baker

  • 1/4 cup unsalted butter
  • 2 T milk
  • 2 t light corn syrup
  • 1/2 t vanilla extract
  • 2 ounces unsweetened chocolate, chopped
  • 1 cup powdered sugar, sifted

Directions:

  1. Lightly grease a couple mini muffin pans or mini donut pans and preheat the oven to 350°F.
  2. Sift together the flour, cocoa powder, baking powder and baking soda. Whisk in the sugar, nutmeg and salt.
  3. Add the butter and rub into the dry ingredients until it becomes coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk, yogurt, vanilla and egg. Add to the flour mixture and stir until just combined. Do not overmix, or your doughnuts may be a bit rubbery.
  5. Fill each cup, 1/2 full with a piping bag or sandwich bag with the corner snipped. Bake for 6 minutes if using the mini donut pan or 8 minutes if making mini muffins, or until the doughnuts spring back when touched. Let cool slightly on a wire rack before glazing.
  6. Make chocolate glaze. In a small saucepan over medium heat, heat butter, milk, corn syrup and vanilla until butter is melted. Remove from flame and add chocolate. Stir until chocolate is melted. Whisk in the powdered sugar. If it’s grainy put it back on top of the stove at a medium heat and whisk until smooth and glossy. Spread glaze over the donuts/muffins then top with sprinkles.

And YOU were such a regular at DD that I remember going through the Drive Thru and having the man just about fall OUT the window and saying “where have you been”.. he sure did miss you! That is when you told me that you used to drive there every day before school.. TO FUNNY!!

  2. Hey Natasha! These sure can be made in a regular sized muffin tin. They would just bake a big longer, like maybe 10-11 minutes. Test their done-ness with a toothpick. Enjoy!

    And I love that you had chocolate milk with your chocolate Dunkin’ Donuts. That is some serious choco love.

    haha I can never overdo chocolate. I think it had to do with growing up in a house with constant baked goodness. And sometimes dessert for dinner. 🙂
